- 3 large peaches (about 600g), pits removed + cut into 6–8 wedges per fruit (or nectarines – make sure they’re ripe!)
- 1 pint (475 ml) cherry tomatoes, halved
- Half a small shallot, peeled + sliced thinly
- 1/2 cup (120g) crumbled feta cheese
- Approx. 10 large leaves fresh basil, chopped
- Approx. 10 large leaves fresh mint, chopped
- 2 Tbsp (30 ml) olive oil
- 1 Tbsp (15 ml) apple cider vinegar
- 1/2 a lemon, juice
- 1 tsp (5 ml) honey
- 1/2 tsp (3 ml) ground cumin
- Salt + pepper, to taste
Instructions
- Combine the salad dressing components in a small bowl or a jar with a lid. Mix or shake until everything is fully blended. Put it to the side.
- In a large bowl, combine the peach slices, halved cherry tomatoes, thinly sliced shallots, crumbled feta, chopped basil, and chopped mint.
- Drizzle the dressing over the salad and gently mix until all ingredients are evenly coated. Add salt and pepper to your liking.
- Serve the salad right away, or let it cool in the refrigerator for half an hour. Enjoy!

- Make sure to use ripe peaches and cherry tomatoes for optimal flavor and texture.
- Adjust the amount of feta cheese to your liking.
