Ingredients

  • 1/2 cup barley
  • 4 cups beef broth
  • 1 onion, chopped

  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Combine beef, barley, beef broth, onion, carrots, celery, garlic, thyme, salt, pepper, and bay leaf in a slow cooker.
  2. Stir to combine all the ingredients.
  3. Cover and cook on low for 480 minutes (8 hours) until the beef becomes incredibly tender.
  4. Before serving, remove the bay leaf.
