Description
A hearty, flavorful slow cooker recipe for tender beef tips in a savory gravy, perfect for comforting family meals.
Ingredients
Scale
- 2 pounds beef stew meat or chuck roast (cut into chunks)
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 ½ cups beef broth
- 3 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce (optional)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 2 tablespoons cornstarch
- 3 tablespoons water (to mix with cornstarch)
Instructions
- Pat the beef dry and sprinkle with salt, pepper, garlic powder, onion powder, and paprika.
- Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides for 2–3 minutes, enhancing their flavor. Transfer the seared beef to the slow cooker.
- Add the diced onion and minced garlic over the beef. Pour in the beef broth, Worcestershire sauce, soy sauce (if using), dried thyme, and parsley. Stir gently to combine.
- Cover the slow cooker and cook on LOW for 360–420 minutes (6–7 hours) or HIGH for 180–240 minutes (3–4 hours) until the beef is tender.
- In a small bowl, mix cornstarch and water to create a slurry. Pour it into the slow cooker and stir well. Cover and cook for an additional 20–30 minutes, allowing the gravy to thicken.
- Serve the beef tips and gravy over mashed potatoes, egg noodles, or rice, spooning extra gravy on top for enhanced flavor.
Notes
For extra flavor, consider adding seasonal vegetables like carrots or mushrooms during the last hour of cooking.
