- 1 cup unsalted butter, softened but cool
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- In a large bowl, cream together the softened butter and packed brown sugar until light and fluffy.
- Stir in the all-purpose flour, ground cinnamon, and a pinch of salt until well combined.
- In a separate bowl, blend the cool unsalted butter with granulated sugar until light and fluffy.
- Mix in the vanilla extract, followed by the whole egg and the egg yolk.
- Gradually add in the all-purpose flour, baking powder, cornstarch, and salt to the butter mixture.
- Combine all ingredients until achieving a soft dough that doesn’t stick to your hands.
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- Shape your dough into small balls and place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges turn light golden brown.
- Allow the cookies to cool on a wire rack before indulging.
Notes
Chilling the dough for at least 30 minutes before baking can help the cookies maintain their shape.
