A delightful cinnamon bread made using sourdough discard, perfect for breakfast or a sweet snack.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ⅓ cup brown sugar (for the batter)
  • 1 egg
  • ¾ cup milk
  • ⅓ cup melted butter
  • ½ cup sourdough discard
  • 1 tablespoon cinnamon (for the swirl filling)
  • 1 cup brown sugar (for the swirl filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Whisk the dry ingredients together in a medium bowl.
  3. Combine the wet ingredients in a separate bowl and whisk until smooth.
  4. Pour half of the batter into the greased loaf pan and sprinkle three-fourths of the cinnamon-sugar mixture over it.
  5. Top with the remaining batter and sprinkle the rest of the cinnamon-sugar mixture on top.
  6. Swirl through the batter with a knife to create marbling.
  7. Bake for 45 to 50 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 20 minutes before transferring to a wire rack.

Notes

For added texture, consider incorporating nuts or dried fruits. Store in an airtight container to maintain freshness.
