A delightful cinnamon bread made using sourdough discard, perfect for breakfast or a sweet snack.
Ingredients

- 1 ¾ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ⅓ cup brown sugar (for the batter)
- 1 egg
- ¾ cup milk
- ⅓ cup melted butter
- ½ cup sourdough discard
- 1 tablespoon cinnamon (for the swirl filling)
- 1 cup brown sugar (for the swirl filling)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Whisk the dry ingredients together in a medium bowl.
- Combine the wet ingredients in a separate bowl and whisk until smooth.
- Pour half of the batter into the greased loaf pan and sprinkle three-fourths of the cinnamon-sugar mixture over it.
- Top with the remaining batter and sprinkle the rest of the cinnamon-sugar mixture on top.
- Swirl through the batter with a knife to create marbling.
- Bake for 45 to 50 minutes, or until a toothpick comes out clean.
- Cool in the pan for 20 minutes before transferring to a wire rack.
Notes
For added texture, consider incorporating nuts or dried fruits. Store in an airtight container to maintain freshness.
