- 1 medium spaghetti squash
- 6 slices of bacon, chopped
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1/2 teaspoon paprika
- 1/4 teaspoon nutmeg
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Place the halves cut-side down on a baking sheet and bake for approximately 40 minutes until tender.
- Heat a skillet over medium heat and cook the chopped bacon until crisp.
- Remove the bacon from the skillet, leaving the fat behind.
- Sauté minced garlic in the bacon fat until fragrant.
- Mix in the heavy cream, shredded cheddar, grated Parmesan, salt, pepper, paprika, and nutmeg until smooth.
- Scrape the flesh of the squash with a fork to create strands.
- Combine the squash strands with the cheese sauce and bacon, then transfer to a greased baking dish.
- Sprinkle extra cheese on top if desired and bake for another 20 minutes until golden and bubbly.
- Garnish with fresh parsley before serving.
Notes
Feel free to experiment with additional vegetables like mushrooms or spinach to enhance the dish.
