Description

A creamy and cheesy spaghetti squash au gratin dish with crispy bacon, perfect for a comforting family meal.


Ingredients

  • 1 medium spaghetti squash
  • 6 slices of bacon, chopped
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Place the halves cut-side down on a baking sheet and bake for approximately 40 minutes until tender.
  4. Heat a skillet over medium heat and cook the chopped bacon until crisp.
  5. Remove the bacon from the skillet, leaving the fat behind.
  6. Sauté minced garlic in the bacon fat until fragrant.
  7. Mix in the heavy cream, shredded cheddar, grated Parmesan, salt, pepper, paprika, and nutmeg until smooth.
  8. Scrape the flesh of the squash with a fork to create strands.
  9. Combine the squash strands with the cheese sauce and bacon, then transfer to a greased baking dish.
  10. Sprinkle extra cheese on top if desired and bake for another 20 minutes until golden and bubbly.
  11. Garnish with fresh parsley before serving.

Feel free to experiment with additional vegetables like mushrooms or spinach to enhance the dish.
