Ingredients

  • – 16 ounces (454 g) brown rice noodles
  • – 3 large cloves garlic or 4-5 small
  • – 1 tablespoon (15 ml) fresh grated ginger
  • – 1 tablespoon (15 ml) vegetable oil
  • – 3/4 cup (180 ml) creamy peanut butter low/no salt*
  • – 4 tablespoons (60 ml) low sodium tamari or soy sauce
  • – 1/3-1 cup (80-240 ml) hot water hot water mixes with peanut butter more easily than cold
  • – 1 tablespoon (15 ml) rice vinegar
  • – 1 tablespoon (15 ml) toasted sesame oil
  • – 1-2 tablespoons (23 ml) sriracha
  • – 1-2 tablespoons (23 ml) maple syrup or honey
  • – 1/2 teaspoon (3 ml) red pepper flakes can omit for less spice
  • – Optional: 2 tsp (10 ml) chili garlic sauce

Instructions

  1. Start by boiling a large pot of water and prepare the noodles as directed on the package.
  2. Chop the garlic finely and place it in a pan with 1 tablespoon of vegetable oil. Any oil will do; I used vegetable oil.
  3. Cook over low heat for around 2 minutes until the garlic is golden brown. Then, add the grated ginger and continue to cook for an additional minute.
  4. Take the pan off the heat and incorporate all the remaining sauce ingredients, beginning with 1/3 cup of hot water. Whisk until the mixture is smooth, adding more water if necessary to achieve the desired thickness.
  5. The amount of water required may vary based on the peanut butter brand used and your personal taste.
  6. Sample the sauce and adjust with more tamari, sriracha, or other seasonings if needed. I tend to add extra tamari because I prefer a saltier taste.
  7. Combine about half of the sauce with the cooked noodles and stir thoroughly. The extra sauce is handy if you want to include beef, tofu, vegetables, etc.
  8. Avoid adding all the sauce at once, as it may be excessive depending on your preference; start with half and increase as required. I typically use all of it because I enjoy a saucy dish, but that’s entirely up to you!
  9. Garnish with crushed peanuts, scallions, and red pepper flakes, and enjoy your meal! This dish pairs well with vegetables and your choice of protein.
