Description

Delightful quesadillas filled with sautéed spinach and creamy feta cheese, perfect for a quick lunch or dinner.


Ingredients

  • 2 large tortillas (flour or corn)
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chopped spinach and sauté until wilted.
  3. Remove from heat and mix the spinach with crumbled feta cheese, season with salt and pepper.
  4. Place one tortilla in the skillet and add a portion of the spinach and feta mixture on one half.
  5. Fold the tortilla over the filling and cook until golden brown on both sides.
  6. Slice into wedges and serve with salsa or sour cream.

Notes

For a cheesier quesadilla, add shredded cheese to the filling. Store leftovers in an airtight container for up to three days.
