Delightful quesadillas filled with sautéed spinach and creamy feta cheese, perfect for a quick lunch or dinner.
Ingredients

- 2 large tortillas (flour or corn)
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chopped spinach and sauté until wilted.
- Remove from heat and mix the spinach with crumbled feta cheese, season with salt and pepper.
- Place one tortilla in the skillet and add a portion of the spinach and feta mixture on one half.
- Fold the tortilla over the filling and cook until golden brown on both sides.
- Slice into wedges and serve with salsa or sour cream.
Notes
For a cheesier quesadilla, add shredded cheese to the filling. Store leftovers in an airtight container for up to three days.
