- 10 tablespoons (150 ml) Homemade Balsamic Vinaigrette
- 1 quart (946 ml) grape tomatoes kept whole or halved
- 10 ounces (283 g) fresh beef mozzarella cut into bite-sized pieces
- 10 cups (2400 ml) baby spinach
Instructions
- Begin by preparing the pasta. Boil salted water, add the pasta, and cook until it is firm to the bite, following the instructions on the packaging. Allow the pasta to cool before assembling the rest of the salad.
- While the pasta is cooling, make the balsamic vinaigrette from scratch.
- Assemble the salads in mason jars. Pour the vinaigrette into each jar, then add layers of tomatoes, mozzarella, pasta, and spinach.
- Secure the lids on the jars tightly. Refrigerate the jars of spinach pasta salad.
- When ready to eat, shake the jar and transfer the salad into a large bowl.
