- 2 cups grated yellow squash
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup onion, finely chopped
- 1 egg, beaten
- Vegetable oil for frying
Instructions
- Combine the grated squash, flour, cornmeal, baking powder, salt, and pepper in a large bowl.
- Add the chopped onion and beaten egg, mixing until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm.
Notes
For extra flavor, strain any excess water from the grated squash. Experiment with seasonings and herbs for a unique taste.
