Ingredients

  • 2 cups grated yellow squash
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup onion, finely chopped
  • 1 egg, beaten
  • Vegetable oil for frying

Instructions

  1. Combine the grated squash, flour, cornmeal, baking powder, salt, and pepper in a large bowl.
  2. Add the chopped onion and beaten egg, mixing until well combined.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from the pan and drain on paper towels.
  7. Serve warm.

Notes

For extra flavor, strain any excess water from the grated squash. Experiment with seasonings and herbs for a unique taste.
