- 2lbs (907 g) chicken wings – cut into drumettes and flats
- 1 tablespoon (15 ml) avocado oil or olive oil
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) ground black pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) paprika
- 1 cup (240 ml) mango – diced
- 1–3 habanero peppers – stem removed and deseeded if desired (see notes)
- 2 tablespoon (30 ml) s apple cider vinegar
- 2 tablespoon (30 ml) s gluten-free tamari sauce
- 2 tablespoon (30 ml) s honey
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) ginger powder
Instructions
- Preheat your oven to 400°F and line a baking tray with parchment paper or foil, then set it aside.
- In a large mixing bowl, combine the chicken wings with avocado oil, ensuring they are fully coated. Season with salt, pepper, garlic powder, and paprika, then mix well.
- Arrange the chicken wings on the prepared baking tray in a single layer. Cook them in the oven for 40-45 minutes at 400°F, turning them over halfway through, until the internal temperature of the chicken is 165°F.
- Take the chicken wings out of the oven and switch the oven setting to broil.
- Coat the wings with the mango habanero sauce prepared as explained below. Place them back on the baking tray and broil for 3-5 minutes until the sauce becomes caramelized. Remove from the oven.
- Transfer the wings to a serving dish and garnish with chopped green onions and any remaining mango habanero sauce.
- While the wings are cooking, prepare the mango habanero sauce by blending the diced mango, habanero peppers, apple cider vinegar, tamari sauce, honey, garlic powder, and ginger powder in a food processor until smooth.
- Pour the blended mixture into a saucepan and heat over medium heat for about 10 minutes, stirring occasionally, until the sauce thickens and becomes glossy.
- Strain the sauce using a fine mesh sieve to eliminate seeds and any chunky mango bits.
- Store the sauce in a bowl to coat the wings as mentioned earlier or refrigerate for up to a day in advance until ready to use.
Notes
- For a spicier sauce, keep the habanero pepper seeds in for more heat customization.
- Ensure the chicken wings are fully coated with mango habanero sauce before broiling for enhanced flavor.
- Choose ripe mango for a sweeter sauce or slightly underripe mango for a tangier taste.
