  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. Make the Strawberry Jam: In a saucepan, combine the strawberries, granulated sugar, and water. Cook over medium heat, stirring gently until the strawberries break down and mixture thickens (about 10 minutes). Allow the jam to cool.
  2. Prepare the Cake Batter: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, blend the melted butter, light oil, granulated sugar, brown sugar, and eggs until smooth. Gradually mix in the room temperature milk, then the vanilla extract.
  3. Combine: Slowly add the dry ingredients into the wet mixture, stirring just until combined. Divide the batter evenly into the prepared pans.
  4. Bake: Place the pans in the preheated oven and bake for 25-30 minutes. Check for doneness by inserting a toothpick; it should come out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack.
  5. Prepare the Frosting: In a large bowl, beat the softened cream cheese and butter until creamy. Gradually add the powdered sugar and mix until smooth. Fold in the cooled strawberry jam and diced strawberries.
  6. Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of strawberry cream cheese frosting on top. Place the second cake layer on top and frost the sides and top with remaining frosting. Decorate with halved strawberries.

Notes

For an extra layer of flavor, consider adding a pinch of espresso powder to the cocoa mix or a splash of vanilla extract to the cake batter.
