- 8 oz (227 g) strawberries (stems trimmed)
- 15 ml freshly squeezed lemon juice
- 45 ml sugar (optional)
Instructions
- Put the strawberries without stems in a blender or food processor and blend them until completely smooth, ensuring there are no pieces left.
- Pour the smooth strawberry mixture into a pot and mix in the lemon juice and sugar, if you choose to use it. Set the stove to medium-high heat and simmer the mixture for approximately 10 minutes, stirring often, until it reaches a thick, jam-like consistency, reducing moisture in the process.
- Set your oven to preheat at 170 degrees F, or the lowest temperature it can maintain, ensuring it does not exceed 200 degrees at its peak.
- Spread the strawberry jam in a rectangular shape on a baking tray lined with a silicone mat or parchment paper. Use an offset spatula or a regular one to distribute the mixture evenly, aiming for a thickness of about 1/8 inch. Remember that the fruit leather will become thinner as it dries in the oven, so avoid spreading it so thin that it becomes transparent.
- Bake in the oven for 3 to 4 hours, until the fruit mixture is no longer sticky but only slightly tacky to the touch. Take it out of the oven and allow it to cool completely. Place it on a cutting board covered with wax paper, and cut into long strips using a pizza cutter. Roll up the strips into fruit roll-ups and enjoy!
