Ingredients

  • – 3 bell peppers (710g)
  • – 2 Tbsp vegetable oil (30ml, divided)
  • – 1 1/4 tsp salt (6g, divided)
  • – 1/4 tsp black pepper (freshly cracked, 0.5g)
  • – 1 lb. beef sausage (454g)
  • – 1 yellow onion (diced, 150g)
  • – 3 garlic cloves (minced, 9g)
  • – 1 tsp Italian seasoning (2g)
  • – 1/2 tsp garlic powder (1g)
  • – 1 cup marinara sauce (240ml)
  • – 1/2 cup long grain white rice (90g, uncooked)
  • – 3/4 cup chicken broth (180ml)
  • – 1 cup mozzarella cheese (115g, shredded)

Instructions

  1. Begin by setting your oven to 350°F. Rinse and pat dry the bell peppers, then slice them in half horizontally. Aim for even halves. Use a paring knife to carefully cut out the stem from the top halves of the peppers. It’s fine if there’s a small opening where the stem was.
  2. Arrange the pepper halves in a 9×13-inch baking dish. Coat them with 1 Tbsp of oil, sprinkle with ¼ tsp salt, and a pinch of cracked black pepper. Place them in the hot oven for 20 minutes to become tender. Once done, take them out and set them aside.
  3. While the peppers are in the oven, prepare the filling. Heat a large pan on medium and pour in 1 Tbsp of oil. Cook the beef sausage until it’s browned.
  4. Add the diced onion and minced garlic to the pan with the sausage. Continue to cook on medium until the onion becomes see-through and the garlic releases its aroma.
  5. Introduce the uncooked rice, marinara sauce, Italian seasoning, garlic powder, 1 tsp salt, and chicken broth to the pan. Mix everything together well.
  6. Cover the pan with a lid, increase the heat to medium-high, and bring the mixture to a vigorous boil. Once it’s boiling, lower the heat to medium-low and let it simmer without removing the lid or stirring for 20 minutes. Afterward, turn off the heat and let it sit undisturbed for another 5 minutes.
  7. Lift the lid, fluff the rice, and stir the mixture to evenly distribute the ingredients. Proceed to fill each pepper generously with the meat mixture, packing them to the brim.
  8. Sprinkle shredded mozzarella cheese evenly over each filled pepper. Lightly cover the baking dish with a tent of aluminum foil and bake for 15 minutes. The peppers should be soft but still hold their shape.
  9. Remove the foil and switch the oven setting to broil. Broil the stuffed peppers for 2-3 minutes until the cheese is slightly golden. Keep a close eye to avoid over-browning the cheese. Optionally, garnish with parsley and enjoy!
