- 2 pounds (907 g) Catfish fillets (Cod, Haddock, Flounder, Grouper, and Salmon would be good choices)
- 2 (170 g) cans lump white crabmeat, drained, flaked or 1 pkg Imitation Crab meat, sliced
- 120 g Italian style bread crumbs
- 2 Green onions, finely chopped
- 1 Celery rib, finely chopped
- 2 Tbsp (30 ml) Mayonnaise
- 2 Tbsp (30 ml) Lemon juice
- 1 Tbsp (15 ml) Olive oil
- 120 g Grated cheese (any)
- 1 tsp (5 ml) Paprika
- bottom of the baking pan:
- 1 Tbsp (15 ml) Olive oil
- 1 Tbsp (15 ml) Butter
- 120 ml Beef broth
- salt/pepper
- sliced peppers, green onions, or mushrooms, or any veggies you have on hand
- lemon, sliced
Instructions
- In a large bowl, combine the crabmeat, breadcrumbs, green onions, celery, mayonnaise, lemon juice, olive oil, grated cheese, and paprika. Stir thoroughly and set aside.
- Pour olive oil, butter, beef broth, and a pinch of salt and pepper into the base of your baking pan.
- Slice your vegetables and place them at the bottom of the baking dish. These will soak up the flavors from the fish and stuffing.
- Rinse the fillets and pat them dry. Lightly season with salt and pepper.
- Evenly distribute the crabmeat mixture onto each fillet and roll them up.
- Arrange the rolled fillets seam-side down in the baking dish. Brush the tops with butter, sprinkle a little salt, pepper, and paprika, and place a lemon slice on each.
- Bake in a preheated oven at 400°F for 35 to 40 minutes, or until they are fully cooked. Cooking time may vary based on your oven and the thickness of the fillets.
