- Celery seed, 1/2 teaspoon (3 ml) (2.5 grams)
- Coriander, ground, 1 teaspoon (5 ml) (5 grams)
- Natural beef casings (quantity as needed)
Instructions
- In a large mixing bowl, combine ground venison, garlic powder, onion powder, black pepper, paprika, cayenne pepper, salt, celery seed, and coriander.
- Add chopped cherries, honey, and soy sauce to the venison mixture.
- Mix all ingredients thoroughly until well combined.
- Soak the natural sheep casings in warm water for about 30 minutes.
- Rinse casings inside and out under cool running water.
- Attach a sausage stuffing attachment to your meat grinder or stand mixer.
- Slide one end of the casing onto the nozzle of the stuffer.
- Carefully fill the casing with the venison mixture, using a steady, even pressure.
- Twist the filled casing into snack stick lengths, about 6 inches each.
- Preheat your BBQ grill to medium heat.
