  • Black pepper, 1 teaspoon (5 ml) (5 grams)
  • Paprika, 1 teaspoon (5 ml) (5 grams)
  • Cayenne pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Celery seed, 1/2 teaspoon (3 ml) (2.5 grams)
  • Coriander, ground, 1 teaspoon (5 ml) (5 grams)
  • Natural beef casings (quantity as needed)

Instructions

  1. In a large mixing bowl, combine ground venison, garlic powder, onion powder, black pepper, paprika, cayenne pepper, salt, celery seed, and coriander.
  2. Add chopped cherries, honey, and soy sauce to the venison mixture.
  3. Mix all ingredients thoroughly until well combined.
  4. Soak the natural sheep casings in warm water for about 30 minutes.
  5. Rinse casings inside and out under cool running water.
  6. Attach a sausage stuffing attachment to your meat grinder or stand mixer.
  7. Slide one end of the casing onto the nozzle of the stuffer.
  8. Carefully fill the casing with the venison mixture, using a steady, even pressure.
  9. Twist the filled casing into snack stick lengths, about 6 inches each.
  10. Preheat your BBQ grill to medium heat.
  11. Place the venison snack sticks on the grill.
  12. Cook for about 15-20 minutes, turning occasionally, until evenly cooked and slightly charred.
  13. Remove the snack sticks from the grill and let them rest for 5 minutes.
