- 4 slices of whole grain bread
- 2 tablespoons vegetable oil (28 g)
- 1/2 cup ricotta cheese (125 g)
- 1/2 cup sun-dried tomatoes, chopped (80 g)
- 1 cup fresh spinach leaves (30 g)
- 1 cup shredded mozzarella cheese (113 g)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat a skillet over medium heat.
- Spread 1 tablespoon of butter on one side of each slice of bread.
- Place two slices of bread, buttered side down, in the skillet.
- Spread 1/4 cup of ricotta cheese evenly on each slice of bread in the skillet.
- Sprinkle salt and black pepper to taste over the ricotta cheese.
- Distribute 1/4 cup of chopped sun-dried tomatoes over the ricotta on each slice.
- Layer 1/2 cup of fresh spinach leaves evenly over the sun-dried tomatoes on each slice.
- Sprinkle 1/2 cup of shredded mozzarella cheese over the spinach on each slice.
- Top each with another slice of bread, buttered side up.
- Cook until the bottom slice is golden brown, about 3-4 minutes.
- Carefully flip the sandwiches and cook the other side until golden brown and the cheese melts, about 3-4 minutes.
- Remove from the skillet and let cool slightly.
- Slice each sandwich in half and serve warm.
