  • 1/2 cup ricotta cheese (125 g)
  • 1/2 cup sun-dried tomatoes, chopped (80 g)
  • 1 cup fresh spinach leaves (30 g)
  • 1 cup shredded mozzarella cheese (113 g)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread 1 tablespoon of butter on one side of each slice of bread.
  3. Place two slices of bread, buttered side down, in the skillet.
  4. Spread 1/4 cup of ricotta cheese evenly on each slice of bread in the skillet.
  5. Sprinkle salt and black pepper to taste over the ricotta cheese.
  6. Distribute 1/4 cup of chopped sun-dried tomatoes over the ricotta on each slice.
  7. Layer 1/2 cup of fresh spinach leaves evenly over the sun-dried tomatoes on each slice.
  8. Sprinkle 1/2 cup of shredded mozzarella cheese over the spinach on each slice.
  9. Top each with another slice of bread, buttered side up.
  10. Cook until the bottom slice is golden brown, about 3-4 minutes.
  11. Carefully flip the sandwiches and cook the other side until golden brown and the cheese melts, about 3-4 minutes.
  12. Remove from the skillet and let cool slightly.
  13. Slice each sandwich in half and serve warm.
