- 1 tsp (5 ml) fresh ginger, peeled and finely grated
- 1 tsp (5 ml) garlic powder
- 1 tsp (5 ml) onion powder
- 1/4 tsp (1 ml) mild chili powder
- 20g breadcrumbs (about 1/4 cup)
- salt and pepper, to taste
- vegetable oil spray
- 1/2 red chili, deseeded and finely diced
- 1 garlic clove, peeled and crushed
- 3 tbsp (45 ml) reduced-sugar and salt ketchup
- 2 tbsp (30 ml) dark soy sauce
- 2 tbsp (30 ml) honey
- 2 tbsp (30 ml) white granulated sweetener
- 2 tbsp (30 ml) white vinegar or rice vinegar
- 2 tbsp (30 ml) water
Instructions
- Combine the ground beef with the finely diced red chili, crushed garlic, grated ginger, garlic and onion powders, mild chili powder, breadcrumbs, salt, and pepper in a large bowl. Mix thoroughly until all ingredients are well incorporated.
- Shape the mixture into small, round meatballs using your hands.
- Lightly coat a baking sheet with vegetable oil spray.
- Arrange the meatballs on the prepared baking sheet, ensuring they are evenly spaced.
- Preheat your oven to a suitable temperature for baking.
- Place the baking sheet with the meatballs in the oven and bake for around 20 minutes, or until they are cooked through and golden brown.
- While the meatballs are baking, prepare the sauce by combining the diced red chili, crushed garlic, reduced-sugar ketchup, dark soy sauce, honey, sweetener, vinegar, and water in a medium saucepan.
- Heat the mixture over medium heat, stirring occasionally until it begins to simmer and slightly thicken.
- Once the meatballs are cooked, remove them from the oven and transfer them to the saucepan with the sauce.
- Gently stir the meatballs in the sauce, ensuring they are well coated.
- Allow the meatballs to simmer in the sauce for a few more minutes to absorb the flavors.
- Serve the sweet chili meatballs over cooked rice noodles and enjoy your meal.
Notes
- Consider using lean ground turkey instead of regular ground beef for a healthier option.
- Adjust the amount of red chili and chili powder based on your spice preference.
- Check the meatballs halfway through baking to ensure even cooking.
