  • 1 tsp (5 ml) fresh ginger, peeled and finely grated
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) onion powder
  • 1/4 tsp (1 ml) mild chili powder
  • 20g breadcrumbs (about 1/4 cup)
  • salt and pepper, to taste
  • vegetable oil spray
  • 1/2 red chili, deseeded and finely diced
  • 1 garlic clove, peeled and crushed
  • 3 tbsp (45 ml) reduced-sugar and salt ketchup
  • 2 tbsp (30 ml) dark soy sauce
  • 2 tbsp (30 ml) honey
  • 2 tbsp (30 ml) white granulated sweetener
  • 2 tbsp (30 ml) white vinegar or rice vinegar
  • 2 tbsp (30 ml) water

Instructions

  1. Combine the ground beef with the finely diced red chili, crushed garlic, grated ginger, garlic and onion powders, mild chili powder, breadcrumbs, salt, and pepper in a large bowl. Mix thoroughly until all ingredients are well incorporated.
  2. Shape the mixture into small, round meatballs using your hands.
  3. Lightly coat a baking sheet with vegetable oil spray.
  4. Arrange the meatballs on the prepared baking sheet, ensuring they are evenly spaced.
  5. Preheat your oven to a suitable temperature for baking.
  6. Place the baking sheet with the meatballs in the oven and bake for around 20 minutes, or until they are cooked through and golden brown.
  7. While the meatballs are baking, prepare the sauce by combining the diced red chili, crushed garlic, reduced-sugar ketchup, dark soy sauce, honey, sweetener, vinegar, and water in a medium saucepan.
  8. Heat the mixture over medium heat, stirring occasionally until it begins to simmer and slightly thicken.
  9. Once the meatballs are cooked, remove them from the oven and transfer them to the saucepan with the sauce.
  10. Gently stir the meatballs in the sauce, ensuring they are well coated.
  11. Allow the meatballs to simmer in the sauce for a few more minutes to absorb the flavors.
