- 2 lbs ground beef (80/20 preferred for juiciness)
- 1 cup shredded Swiss cheese
- 1 cup cooked bacon, chopped
- 1 cup mushrooms, sliced and sautéed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Prepare a baking sheet with foil or select a loaf pan.
- Cook the bacon in a skillet until it’s crispy. Remove it from the pan and set it aside on a paper towel to drain.
- In the remaining bacon fat, sauté the sliced mushrooms until browned and tender. Set them aside to cool slightly.
- In a large bowl, combine the ground beef, beaten eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper.
- Gently mix in half of the shredded Swiss cheese.
- Shape the meat mixture into a loaf on the prepared baking sheet. Gently press the remaining Swiss cheese, sautéed mushrooms, and cooked bacon on top of the loaf.
- Bake for 45–55 minutes or until the internal temperature reaches 160°F (71°C).
- Allow it to rest for 10 minutes before slicing. Garnish with parsley if desired.
Notes
Chop onions and mushrooms finely for even distribution. Rest the meatloaf after baking for juiciness.
