A cozy and comforting Swiss bacon mushroom meatloaf, combining juicy beef, savory bacon, and creamy Swiss cheese for a heartwarming meal.


Ingredients

  • 2 lbs ground beef (80/20 preferred for juiciness)
  • 1 cup shredded Swiss cheese
  • 1 cup cooked bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet with foil or select a loaf pan.
  2. Cook the bacon in a skillet until it’s crispy. Remove it from the pan and set it aside on a paper towel to drain.
  3. In the remaining bacon fat, sauté the sliced mushrooms until browned and tender. Set them aside to cool slightly.
  4. In a large bowl, combine the ground beef, beaten eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper.
  5. Gently mix in half of the shredded Swiss cheese.
  6. Shape the meat mixture into a loaf on the prepared baking sheet. Gently press the remaining Swiss cheese, sautéed mushrooms, and cooked bacon on top of the loaf.
  7. Bake for 45–55 minutes or until the internal temperature reaches 160°F (71°C).
  8. Allow it to rest for 10 minutes before slicing. Garnish with parsley if desired.

Notes

Chop onions and mushrooms finely for even distribution. Rest the meatloaf after baking for juiciness.
