- 1 package gnocchi
- 1 lb ground beef
- 1/2 medium onion, diced
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can Rotel
- 1 packet of taco seasoning
- 1/2 cup water
- 1 cup sweet corn, canned or frozen
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup sharp cheddar cheese, shredded
Instructions
- Start by bringing a medium stock pot filled with water to a boil. Follow the package instructions for cooking the gnocchi.
- While the gnocchi cook, heat a large frying pan over medium heat. Add the ground beef, diced onion, minced garlic, salt, and black pepper. As the beef cooks, stir often until it’s no longer pink.
- Drain the excess fat from the beef. Next, add the can of Rotel, taco seasoning, and water into the mix. Reduce the heat to low-medium and let it simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- As the gnocchi finish cooking, drain them and add them into the beef mixture, along with the sweet corn. Stir everything together and continue to cook until most of the liquid evaporates, leaving a savory and rich filling.
- Remove the skillet from the heat. Now, top the gnocchi mixture with shredded Monterey Jack and sharp cheddar cheese. Cover with a lid and let it sit for a few minutes, allowing the cheese to melt perfectly.
Notes
For a vegetarian version, replace the ground beef with lentils or black beans. Leftovers can be stored in an airtight container for up to three days.
