Delicious and comforting enchiladas made with rotisserie chicken, creamy sauce, and cheese, perfect for family gatherings.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 flour tortillas
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (Monterey Jack or Cheddar)
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, cream of chicken soup, sour cream, half of the cheese, green chilies, garlic powder, salt, and pepper in a large bowl. Mix well.
  3. Spoon the chicken mixture onto each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  4. Pour any remaining chicken mixture over the top of the enchiladas.
  5. Sprinkle the remaining cheese over the enchiladas.
  6. Bake for 20-25 minutes, until the cheese is bubbly and golden.
  7. Garnish with chopped green onions before serving.
