- 2 cups shredded rotisserie chicken
- 8 flour tortillas
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese (Monterey Jack or Cheddar)
- 1 can (4 oz) diced green chilies
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the shredded chicken, cream of chicken soup, sour cream, half of the cheese, green chilies, garlic powder, salt, and pepper in a large bowl. Mix well.
- Spoon the chicken mixture onto each tortilla, roll them up, and place them seam-side down in a greased baking dish.
- Pour any remaining chicken mixture over the top of the enchiladas.
- Sprinkle the remaining cheese over the enchiladas.
- Bake for 20-25 minutes, until the cheese is bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
For extra flavor, consider using different cheeses or adding ingredients like black beans or jalapeños.
