- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Fresh sage for garnish
- Fresh thyme for garnish
- Paprika for sprinkling (optional)
Instructions
- Hard boil the eggs: Place them in a pot, cover with water, bring to a boil, then remove from heat and let sit for 12 minutes.
- Cool the eggs in cold water to prevent overcooking.
- Peel the eggs and slice them in half lengthwise. Remove yolks and place in a bowl.
- Mash yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish with fresh sage and thyme, and optionally sprinkle paprika on top.
- Serve chilled.
Notes
Cover the pot while boiling for even cooking. For a creamier filling, add extra mayonnaise.
