  • 4 slices of sourdough bread
  • 2 tablespoons (30 ml) vegetable oil (28 grams)
  • 4 ounces (113 g) cream cheese, softened (113 grams)
  • 1/2 cup (120 ml) shredded cheddar cheese (57 grams)
  • 1/2 cup (120 ml) shredded mozzarella cheese (57 grams)
  • 1 tablespoon (15 ml) mayonnaise (15 milliliters)
  • 1 ripe tomato, sliced
  • 1/4 cup (60 ml) fresh spinach leaves (15 grams)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Set aside.
  2. In a bowl, mix the softened cream cheese, shredded cheddar, and shredded mozzarella.
  3. Stir in the mayonnaise, and season with salt and black pepper to taste.
  4. Spread the cheese mixture evenly on one side of each slice of sourdough bread.
  5. Layer sliced tomato and fresh spinach leaves on two of the bread slices over the cheese mixture.
  6. Place 3 slices of cooked turkey bacon on top of the tomato and spinach on each sandwich.
  7. Top with the remaining slices of bread, cheese side down, to form two sandwiches.
  8. Heat a skillet over medium heat and add 1 tablespoon of butter.
  9. Once the butter is melted, place one sandwich in the skillet.
  10. Cook each sandwich for 3-4 minutes per side, until golden brown and cheese is melted.
  11. Add more butter to the skillet and repeat with the second sandwich.
  12. Remove sandwiches from the skillet and let them cool slightly before slicing and serving.
