Ingredients

  • 1 butternut squash (about 3 cups, cubed)
  • 1/2 cup vegetable broth
  • 1 tbsp olive oil
  • 1 small white onion (diced)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • Salt and pepper (to taste)
  • 1 tsp smoked paprika
  • 3/4 cup gruyère cheese (grated)
  • Fresh cilantro and parsley (for garnish)

Instructions

  1. Heat the olive oil in a cast iron skillet over medium heat.
  2. Add the ground turkey, diced onion, minced garlic, and chopped bell pepper to the skillet. Sauté until the turkey is no longer pink.
  3. Season the mixture with salt, pepper, and smoked paprika, stirring well to incorporate the spices.
  4. Add the cubed butternut squash and vegetable broth to the skillet. Mix gently, ensuring most squash pieces are submerged in the broth.
  5. Cover the skillet and reduce the heat to medium-low. Cook for about 12 minutes or until the butternut squash softens.
  6. Remove from the stovetop and sprinkle the grated gruyère cheese over the top.
  7. Transfer the skillet to a preheated 400°F oven. Bake for approximately 5 minutes or until the cheese has melted beautifully.
  8. Garnish with fresh cilantro or parsley before serving.

Notes

For additional flavors, consider adding spices or other vegetables like spinach or kale. Leftover turkey can be used to save time.
