- 1 butternut squash (about 3 cups, cubed)
- 1/2 cup vegetable broth
- 1 tbsp olive oil
- 1 small white onion (diced)
- 2 cloves garlic (minced)
- 1 red bell pepper (chopped)
- Salt and pepper (to taste)
- 1 tsp smoked paprika
- 3/4 cup gruyère cheese (grated)
- Fresh cilantro and parsley (for garnish)
Instructions
- Heat the olive oil in a cast iron skillet over medium heat.
- Add the ground turkey, diced onion, minced garlic, and chopped bell pepper to the skillet. Sauté until the turkey is no longer pink.
- Season the mixture with salt, pepper, and smoked paprika, stirring well to incorporate the spices.
- Add the cubed butternut squash and vegetable broth to the skillet. Mix gently, ensuring most squash pieces are submerged in the broth.
- Cover the skillet and reduce the heat to medium-low. Cook for about 12 minutes or until the butternut squash softens.
- Remove from the stovetop and sprinkle the grated gruyère cheese over the top.
- Transfer the skillet to a preheated 400°F oven. Bake for approximately 5 minutes or until the cheese has melted beautifully.
- Garnish with fresh cilantro or parsley before serving.
Notes
For additional flavors, consider adding spices or other vegetables like spinach or kale. Leftover turkey can be used to save time.
