- 2 celery stalks, diced

- Salt and pepper to taste

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery, and sauté until softened.
- Add garlic and mushrooms, and cook until mushrooms are tender.
- Stir in lentils, vegetable broth, thyme, turmeric, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
- Adjust seasoning as needed and serve warm.
