  • 46 oz tomato juice
  • 46 oz water
  • 1 tablespoon better than beef bouillon, or 3 bouillon cubes
  • 16 oz frozen mixed vegetables
  • 4 cups potatoes (cubed)
  • 1 teaspoon salt
  • 1 tablespoon minced dry onion
  • 1 tablespoon sugar
  • ¼ teaspoon pepper
  • ¼ teaspoon basil
  • 2 bay leaves
  • ⅓ cup barley
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Brown and cook the ground beef in a large skillet over medium heat until fully cooked.
  2. Drain any excess fat from the meat.
  3. In a 6-quart stockpot, combine the cooked ground beef with all the remaining ingredients.
  4. Bring the mixture to a gentle simmer over medium heat.
  5. Allow the soup to simmer for at least one hour, letting the flavors meld together.
  6. Remove the bay leaves from the pot before serving.
  7. Serve the vegetable beef soup warm, enjoying every hearty bite.

Notes
