  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat until fully cooked, then drain excess fat.
  2. Add diced onion and minced garlic, sautéing until soft.
  3. Stir in diced carrots, celery, and potatoes, cooking briefly to develop flavors.
  4. Add chopped green beans, diced tomatoes, and beef broth.
  5. Sprinkle in dried thyme and rosemary, along with salt and pepper.
  6. Bring to a boil, then reduce to a simmer for 30-40 minutes, until vegetables are tender.
  7. Taste and adjust seasoning before serving hot.

Notes

For a thicker soup, mash some of the potatoes against the pot’s side. Adjust seasoning as needed with vinegar or lemon juice for brightness.
