- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat until fully cooked, then drain excess fat.
- Add diced onion and minced garlic, sautéing until soft.
- Stir in diced carrots, celery, and potatoes, cooking briefly to develop flavors.
- Add chopped green beans, diced tomatoes, and beef broth.
- Sprinkle in dried thyme and rosemary, along with salt and pepper.
- Bring to a boil, then reduce to a simmer for 30-40 minutes, until vegetables are tender.
- Taste and adjust seasoning before serving hot.
Notes
For a thicker soup, mash some of the potatoes against the pot’s side. Adjust seasoning as needed with vinegar or lemon juice for brightness.
