  • 2 teaspoons (10 ml) liquid smoke flavoring
  • 2 teaspoons (10 ml) mustard seed
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) coarse ground black pepper
  • 3 pounds (1.36 kg) lean ground beef
  • 1 cup (240 ml) shredded Cheddar cheese
  • 2 jalapeno peppers, seeded and minced

Instructions

  1. Mix together in a large bowl: the cold water, curing blend, liquid smoke, mustard seeds, garlic powder, and black pepper until the curing blend has fully dissolved. Combine the ground beef, Cheddar cheese, and minced jalapeños into the mixture, stirring until everything is well incorporated and slightly tacky, which should take about 3 minutes. Split the mixture into two portions and shape each into logs about 2 inches thick. Tightly wrap each log in aluminum foil and chill in the refrigerator for 24 hours.
  2. Set your oven to 300 degrees F (150 degrees C) and line a baking tray with aluminum foil.
  3. Unwrap the sausage logs and lay them on the prepared baking tray.
  4. Cook in the preheated oven until a meat thermometer shows the sausages have reached at least 160 degrees F (72 degrees C) in their centers, which should take between 1 1/2 to 2 hours. Allow the sausages to cool on a rack until they reach room temperature, occasionally using a paper towel to blot any extra grease. Slice them thinly for serving.
