  • 8 celery sticks, chopped (approximately 208g)
  • 1/4 red onion, diced small (around 50g)
  • 1/4 cup fresh parsley, chopped (10g)
  • 1/4 cup toasted pecans, chopped (about 30g)
  • 3 tablespoons nonfat Greek yogurt (approximately 45g)
  • 3 tablespoons lite mayo (about 45g)
  • 2 tablespoons clear balsamic vinegar or apple cider vinegar
  • 1 tablespoon fresh squeezed lemon juice (30g)
  • 1/2 teaspoon poppy seeds (optional)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine all the salad ingredients—chicken, diced apple, chopped celery, diced red onion, chopped parsley, and toasted pecans—in a large bowl.
  2. In a separate bowl, whisk together the dressing ingredients: nonfat Greek yogurt, lite mayo, balsamic vinegar, lemon juice, kosher salt, and black pepper.
  3. Pour the dressing over the salad mixture. Toss well to combine, ensuring every ingredient is coated with the creamy dressing.
