Instructions

  1. Mash the ripe bananas in a large mixing bowl using a fork or potato masher.
  2. Add the melted butter to the mashed bananas.
  3. Mix in the sugar until smooth.
  4. Crack in the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Whisk together the flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  7. Fold the dry mixture into the banana mixture until just combined.
  8. Add nuts if using, and fold gently.
  9. Pour the batter into the greased loaf pan and tap it to remove air bubbles.
  10. Bake in a preheated oven at 350°F for 55 to 65 minutes until a toothpick comes out clean.
