  • Salt and pepper, to taste
  • 1 1/2 cup (360 ml) s ricotta cheese
  • 1 egg
  • 1/2 cup (120 ml) grated halal-friendly cheese
  • 1 1/2 cup (360 ml) s shredded mozzarella cheese
  • 2 cup (480 ml) s marinara sauce
  • 1 teaspoon (5 ml) dried Italian herbs
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) fresh basil, chopped (optional )

Instructions

  1. Turn on the oven to 375°F (190°C) to preheat.
  2. Gently coat the zucchini slices with olive oil, add salt and pepper, and grill or roast them for 4–5 minutes on each side until they become soft.
  3. In a mixing bowl, combine ricotta cheese, egg, grated halal-friendly cheese, Italian herbs, and minced garlic until well blended.
  4. Pour 1/2 cup of marinara sauce into the base of a baking dish.
  5. Place a layer of the cooked zucchini slices over the sauce, then add a layer of the ricotta mixture and a portion of shredded mozzarella on top.
  6. Continue layering until all components are used, ending with marinara sauce and mozzarella cheese on the topmost layer.
  7. Cover with foil and place in the oven for 20 minutes, then remove the foil and bake for another 10 minutes until the cheese is bubbly and golden brown.
  8. Allow the dish to sit for 5–10 minutes before serving. Optionally, sprinkle with fresh basil for garnish.
