- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¼ cup mini pepperoni slices
- 2 tablespoons fresh basil, chopped
- Optional toppings: diced bell peppers, mushrooms, olives, red onions
Instructions
- Preheat oven to 400°F (205°C). Line baking sheets with parchment paper.
- Slice zucchini into ¼-inch thick rounds.
- Brush zucchini with olive oil and season with Italian seasoning, garlic powder, salt, and pepper.
- Pre-bake for 5-7 minutes until slightly softened.
- Top each slice with marinara sauce, mozzarella, pepperoni, and chosen toppings.
- Sprinkle with Parmesan cheese.
- Bake for additional 7-8 minutes until cheese melts and bubbles.
- Garnish with fresh basil before serving.
